Because the main theme of Oz The Great and Powerful is good versus evil (between the witches and within Oz himself) I decided that I needed both chocolate and vanilla cupcakes.
You can follow the box directions or you can “dress them up” a bit. Exchange the water for buttermilk, add 1 small package of instant pudding, and a teaspoon or so of vanilla extract. For the chocolate cupcakes you can also add half a bag of mini chocolate chips to the mix. Ooo, you could also use some green food coloring to make some emerald colored cupcakes as well!
Make sure you mix your ingredients up really well (blurry photo of the buttermilk but my mixer makes me happy). Then, using an ice cream scoop to get an even amount of batter in each liner, fill up your muffin tins and bake according to the package directions. Let cool completely and you are ready to frost.
You can always make your own frosting, but I don’t have the time or patience for that so I picked up 3 types of frosting but only ended up using 2, the cream cheese and the key lime!!
The majority of the cupcakes I made were the simplest – the Emerald City Cupcake!
1) Use a frosting bag and a large open star tip to pipe the Key Lime frosting on to either your vanilla or chocolate cupcakes in a swirly motion, making a large peak of frosting.
2) Then sprinkle the green candy sprinkles (found in the baking aisle at the craft store) on top.
3) Boom! Emerald City is complete!
I also made some other character cupcakes using props I cut out with my craft cutter.
My favorite character is, of course, Glinda the Good. I cut a tiara shaped cupcake wrapper out of pearly white glitter cardstock. I dropped a vanilla cupcake inside the wrapper and then frosted it with a big pile of my cream cheese frosting. To bring out the airiness and “fluffiness” of Glinda’s gorgeous costumes I added a dollop if white cotton candy on top of the frosting, yum!!
The sure-to-be Great Wizard of Oz is dressed for success! I took a plain white cupcake wrapper and used my black sharpie to create his overcoat then hot glued on a glittery bow that I fashioned with cardstock. The glittery top hat is actually a leprechaun hat shape that I just shrunk down cut out in glitter cardstock. Of course the hat is not edible so make sure to spread the word if you feel the need (my 5 year old told me you couldn’t eat the hat before I had a chance to mention it). Again, I used the vanilla cupcakes with the cream cheese frosting for Oz.
A simple cupcake wrapper, cut out of black glitter cardstock, and a few non-edible feathers help evoke Evanora, the Wicked Witch of the East. The Key Lime frosting on the dark chocolate cake is very striking!
Make sure you have plenty of Emerald City Cupcakes because they are sure to be a hit!!

Since my daughters have both decided that they are going to be characters from Oz the Great and Powerful for Halloween, as well as assigned characters to my husband and I, I have a feeling we will be making these cupcakes again this fall, if not before!
