- Red Velvet Cake boxed cake mix
- 1/2 cup of melted butter – cooled
- 1 egg
- 1-2 tsp Vanilla Extract (I tend to like more vanilla)
- Frosting
- Vanilla candy melts
- Sprinkles
Preheat oven to 350. Mix the first 4 ingredients together until a soft dough forms. Roll 1″ balls of dough and place them on a prepared baking sheet. Bake for 10-12 minutes on the middle rack of the oven. Allow to cool 1 minute on the baking sheet before transferring to wire rack to completely cool.
Once the cookies have cooled, match them up so each cookie has a size twin, flip them over, and spread frosting on 1 half of each pair. Now, you are free to use any frosting you want, homemade or store bought, but Alberta is a big fan of this easy frost frosting.
After you frost the cookies, sandwich them together for a beautiful cookie sandwich.
I’m not sure if you’ve heard but elves love their cookies extra sweet with a bit of candy coating. So go ahead and melt a bunch of candy melts per the package directions and dunk those sandwiches right in that melted yummy candy coating! Then sprinkle a generous amount of any festive sprinkles you have on the coating while it is still warm.
